Maine's micro seasons enable our Chefs to play. For you, this means they are always coming up with new dishes and creative ways of preparing the Maine foods you know and love. Immerse yourself in this experience at our open kitchen while the Chefs strive to wow your senses.

No one likes getting out-ordered. Good thing Evo's dishes are meant to be shared. Modeled after mezze - groups of small dishes that are meant to be enjoyed together - you're encouraged to order a variety of shareable plates.  If you're not into sharing, our menu has you covered too.

Thanks to our farmers and purveyors, the food in our kitchen is the freshest you can get.

Lunch is served at Evo Tuesdays - Saturdays from 11:30am-2:00pm.

GLOSSARY

Kabis:
Eastern Mediterranean pickling used to preserve a wide range of garden vegetables

Labneh:
Strained yogurt

Za'atar:
Mixture of sesame and wild thyme that has been pickled and dried

Muhammara:
(Mu•homm•ura)
Dip consisting of crushed walnuts, tahini, and Armenian spices

Sumac:
Lemony flavored spice made from drying the berries of a sumac bush

Harra:
Translated from Arabic meaning hot or spicy

Arak:
A Lebanese spirit distilled from grapes and flavored with green anise

Shakshuka: 
(Sha•shoe•ka)
Rustic sauce made of crushed tomatoes and eastern Mediterranean spices

DRINKS

We know drinks are important. So, our cocktails use the same fresh, local ingredients as our kitchen. And our bartenders think of themselves as liquid chefs. Like their culinary counterparts, they strive to create cocktails as memorable as your meal.  

Portland's a beer town. So, our five draft beers are always local and rotate frequently.

Because you can't always commit to a bottle, we offer a wide variety of wines by the glass. Because not everyone is a wine expert, we've sorted our list by flavor profiles and not by region so it's easy to find something delicious.
